Whiting is a fish that’s popular with anglers, as it can be a challenge to catch, and also with consumers, due to its subtle flavour on the plate. Two of the most sought after species are Yellowfin Whiting and King George Whiting.
Yellowfin Whiting is found around the mouth of rivers in the south of Western Australia and South Australia. As the name suggests it has bright yellow lower fins and is sold whole, or as fillets. It’s low in oil and has a sweet flavour, and is popular with all methods of cooking
