Otherwise known as the Australian Herring, the Tommy Ruff could be considered the little cousin of Australian Salmon. The similarity in appearance cannot be denied, but the size of the Tommy Ruff is much smaller.
Although treated with disgust by some fisherman because of the amount of bone, these fish are certainly great for eating. They can be cooked in many different ways but the best results are had by smoking or whole on a charcoal BBQ. The taste is near unbeatable.
This close relation of the Salmon can be found in the cooler waters on the South Coast of Australia and can be caught all year round. Although bigger in the winter months Parissos Seafood’s will have a fresh supply year round.
