Whiting is a fish that’s popular with anglers, as it can be a challenge to catch, and also with consumers, due to its subtle flavour on the plate. Two of the most sought after species are Yellowfin Whiting and King George Whiting.
King George Whiting looks a little different from other Whiting species with its small scales and dark spots. It is fished in waters from southern New South Wales to Perth. This fish is best cooked simply, either pan fried or baked, and considered by experts as one of Australia’s best eating fish.
