  • Such is their natural appearance in nature, Jonathan Swift was quite right to say, “it was a bold man who first ate an oyster”. Once food for the poor and underprivileged, the oyster is now the most commonly enjoyed mollusc around the world.
    As is the case with many varieties of seafood, Australia has some of the best, if not the best oysters in the world. There are two main varieties of Oysters, the cupped and flat oyster. In saying this, oysters are generally sold on their location as opposed to their variety – this is because the oyster itself takes on much of its flavour from the environment.
    Due to their robust nature and relative ease of production, the majority of Australian oysters are of the cupped variety. Found both wild and farmed in large bodies of water across this great land.
    Saucer Scallops – also known as white or mud scallops because of their more pale flesh and muddy breeding grounds.
